Lemon Rice – Perfect Lunch Recipe

It’s quick, hassle-free and also makes a great lunch box option. Lemon RIce is an excellent vegetarian recipe and the best way to use leftover rice. You can make lemon rice with freshly cooked rice as well.

Ingredients:

Leftover cooked rice – 1 cup
Juice of one lemon
Salt to taste

Tempering:
Oil – 1 tbsp
Mustard seeds or Rai – 1/2 tsp
Channa daal – 1 tsp
Urad daal – 1 tsp
Curry leaves – 9
Broken cashews – 6
Turmeric – 1/2 tsp
Slit green chilies – 2

Method:

In a bowl mix leftover cooked rice, lemon juice, and salt. Keep it aside.

Heat oil in a pan. Once the oil is hot add mustard seeds or rai and allows it to crackle. Then add channa daal, urad daal, cashews and cook them for few seconds. Then add curry leaves and green chilies. Cook for 15 seconds.

Then add turmeric and lemon mix rice. Mix them well. Yummy and tangy lemon rice is ready to serve.

Tip:

  1. You can use dry red chili instead of green chili.
  2. You can add peanuts too.
  3. Don’t reheat lemon rice else it will taste bitter.
