Bhindi With Tomato is my all time favorite. It goes well with hot paratha with white butter – sooo yummy. It is perfect lunch or dinner recipe.
Bhindi -250 gms
Onions ( chopped lengthwise)- 1 big
Finely chopped ginger – 1 inch
Finely chopped garlic – 3
Finely chopped coriander – 1/4 cup
Finely chopped tomato ( Deseed ) – 2
Cumin – 1 tsp
Coriander powder – 1/2 tsp
Haldi – 1/4 tsp
Sabzi Masala – 1/2 tsp
Amchur – 1/2 tsp
Olive oil – 1 tbsp
Salt to taste
Heat the oil, add cumin and allow them to crackle. Add the onions, ginger, garlic, green chili and cook till the onions turn golden brown. Add coriander powder, turmeric and sabzi masala. Then add the bhindi and cook over medium flame till they are soft. Add salt, amchur and mix well.
Now add chopped tomato and Cook for 2 minutes ( covered ).
Garnish with coriander leaves. Serve hot with parathas.
