Pumpkin Capsicum Sabzi or Kaddu Shimla Mirch Ki Sabji – Lunch or Dinner Recipe

There are many ways pumpkin can be incorporated into your diet. It can be desserts like pumpkin halwa, soups, salads, or even bread. Pumpkin is good for the heart, rich in fiber, potassium, and vitamin C content in pumpkin all support heart health.

Amazing combination of Tri-Color capsicum with pumpkin is a perfect lunch or dinner recipe.

Tri-Color Capsicum

Kaddu Capsicum Sabzi

Ingredients :
Kaddu or pumpkin – 1/2 kg
Chopped Tri-Color Capsicum – 1 cup
Fenugreek seeds – 1/8 tsp
Mustard seeds or Rai – 1/2 tsp
Cumin – 1/2 tsp
Dry red chilly – 1
Turmeric – 1/4 tsp
Finely chopped green chilies -2
Finely chopped coriander leaves – 1/4 cup
Coriander powder – 1/2 tsp
Sabzi Masala – 1/2 tsp
Juice of one lemon
Oil -1 tbsp
Salt to taste

Method:
Wash and cut the pumpkin into cubes. Keep it aside.

Heat oil in a pan and add fenugreek. Allow the fenugreek to brown. Then add dry red chilies and allow to change color and get a little smokey,

Now add mustard seeds or rai & cumin and allow them to crackle.

Lunch or Dinner Recipe

Lower the flame and add turmeric, coriander powder, sabzi masala. Cook for a minute then add chopped pumpkin and mix it well. Cook on medium high flame for 10 minutes (covered).

After 10 minutes add capsicum, green chilies, salt, and mix it well. Cook for another 10 minutes on low flame.
Finally, add lemon and coriander leaves. Serve hot.
