Tri-color Capsicum Marmalade is a delicious spread made with capsicum, sugar and black pepper, lemon. You can have this yummy marmalade with paratha, chaats or with chips.
Tri-color Capsicum – 6 ( 2 green, 2 red, 2 yellow)
Brown sugar – 1 cup
Juice of 2 lemons
Crushed Black pepper – 1 tbsp
Salt to taste
Rinse capsicum and dry them. Now place a wire rack on top of the flame and roast them from all the sides evenly on low to medium flame until its skin turns black.
Now remove them and let it cool completely.
Remove the black skin with the help of a knife. Now cut roasted capsicum and remove its seeds.
Chopped roasted capsicum skin and keep 1/2 cup and grind the remaining roasted capsicum into a smooth paste.
Heat a non-stick pan and add roasted capsicum puree, sugar, chopped roasted capsicum. Cook on medium to low flame until marmalade becomes thick.
Add crushed black pepper and mix well. Once marmalade starts to thickens switch off the flame. Allow marmalade to cool down and then add lemon juice and mix well.
Yummy Tri-color capsicum marmalade is ready.
* Pour few drops of prepared marmalade on a plate if it spreads then it’s not ready if it stays firm without moving then it’s ready.
* Allow to cool and store in sterilized glass jar.
*Keep marmalade in the refrigerator after every use. Use a clean and dry spoon. It last long for 3 months.
