Sprouts Sabzi – Protein Rich Lunch Recipe

Green moong bean sprouts are versatile. It can be used in pulao, curries, soups, salads even in stuffed paratha.
Moong sprouts sabzi is an easy, quick and healthy option. This dish also goes well in the tiffin box.

Protein Rich Lunch Recipe – Sprouts Sabzi

Ingredients :
Sprouts – 1 cup
Olive oil – 2 tbsp
Cumin – 1/ 2 tsp
Turmeric – 1/2 tsp
Coriander powder – 1
Sabzi masala – 1 tsp
Finely chopped onion- 1
Finely chopped tomato – 2
Finely chopped garlic – 2
Finely chopped ginger – 2 tbsp
Finely chopped green chilly – 1
Finely chopped coriander leaves – 1/4 cup
Salt to taste

Method:
Boil sprouts with 1/2 cup of water for 8 minutes. Sieve through a strainer and keep it aside.

Heat Oil in a pan on medium heat and add cumin. Allow them to sizzle. Add chopped onions and fry till golden color. Now add the ginger, garlic and fry till the raw flavor is gone.
Add boiled sprouts and cook for 3-4 minutes. Add turmeric, coriander powder, sabzi masala, green chili, salt and mix well. Add a little water and cook it covered till oil separates.
Add chopped tomatoes and cook for 5 minutes ( covered ). Mix it well.

Garnish with chopped coriander leaves, lemon and serve hot with parathas.
