Heart Friendly Sabzi – Bhindi Sabzi with curd
Bhindi is my favorite vegetable. This recipe is perfect for lunch or dinner and it goes well with hot chapatis or parathas. Bhindi is also known as okra or lady finger is a great source of the vitamins, minerals, dietary fibers and other healthy nutrients. Bhindi is liked by kids a lot and it can be prepared with various variations like bhindi with peanuts, sesame bhindi, aloo bhindi with fennel, bhindi with tomato, bhindi do pyaza, and much more the list is endless.
Bhindi – 250 gms
Finely chopped onion – 1 big
Finely chopped ginger – 1 inch
Finely chopped garlic – 3
Finely chopped coriander – 1/4 cup
Cumin – 1 tsp
Coriander powder – 1/2 tsp
Sabzi masala – 1/2 tsp
Amchur – 1/2 tsp
Curd – 1/4 cup
Olive oil – 1 tbsp
Salt to taste
Heat oil in a nonstick pan and add cumin, allow them to crackle. Add the onions, ginger, garlic, green chili and cook till the onions turn golden brown. Add coriander powder and sabzi masala.
Then add curd and salt and cook for 2 to 3 more minutes. Then add chopped bhindi and cook over medium flame till they are soft. Finally, add amchur and mix it well.
Garnish with coriander leaves. Serve hot with parathas.
