Beetroot Dip is very tasty and healthy vegetable chutney which goes well with dosa, paratha. Beetroots are rich in nutrients that help to boost your immune system and can produce new blood cells. This chutney is an easy way to add beetroot in your diet.
Boiled and chopped beetroot – 2 medium
Chopped Garlic – 5
Green chili – 3
Cumin – 1/2 tsp
Channa daal – 1/2 tsp
Urad daal – 1/2 tsp
Olive oil – 1/2 tsp
Juice of one lemon
Salt to taste
- Heat olive oil in a pan and add cumin seeds, allow it to crackle. Now add urad daal then channa daal and cook for 15 seconds.
- Add chopped garlic, green chili, boiled & chopped beetroot, salt and cook for 2 -3 minutes.
- Now cool the mixture and grind with the juice of one lemon into a smooth paste (no water).
